Start your morning off with fresh fruit and creamy yoghurt, with some healthy quinoa for extra fiber and texture.
¼ cup flaked coconut
½ cup quinoa flakes
½ cup mixed seeds
2 tablespoons cranberry juice, milk or water
¾ cup frozen raspberries
½ cup low-fat Greek or natural yoghurt
8 strawberries, chopped
In a bowl, combine
the flaked coconut, quinoa flakes, mixed seeds, and juice, milk or water.
Select 2 glasses. Layer
the raspberries, half the yoghurt, and combined
seed mix into the glasses.
Divide remaining yoghurt between the glasses and top with strawberries. Garnish with mint leaves. Serve straight away or cover and chill until serving time.
