Breakfast Burrito

Whether you over-indulged last night, or the kids just want a change from toast and jam, these speedy, protein-packed egg & ham burritos could be your saviour.


4 eggs
Salt and pepper, to taste
1 tbsp olive oil
80 g sliced leg ham, chopped
½ cup grated tasty cheese
2 burrito tortilla wraps, warmed
2 tbsp medium taco sauce
fresh coriander, sprigs, to serve


Whisk eggs seasoned with salt and pepper in a bowl until combined.
Heat oil in a medium, non-stick frying pan over a medium heat. Add ham. Cook, stirring, for about 4 minutes, or until lightly golden.
Pour egg mixture over ham. Cook over a medium heat, without stirring, for 30 seconds, or until edges start to set. Using a wooden spoon, drag egg from side-to-side until large curds form and egg mixture is almost cooked. Remove from heat.
To serve, divide cheese between tortillas. Top evenly with scrambled egg mixture. Spoon over taco sauce. Serve with coriander sprigs.
